Savee is a unique sparkling wine that proudly and recognizably expresses exuberant Marlborough Sauvignon Blanc characters. It's been called "supercharged Sauvignon Blanc" by Bob Campbell Master of Wine and in May 2010 was chosen by Steven Spurrier in Decanter as his best sparkler.
Winemaking: The grapes that went into this wine were grown in Marlborough's Wairau Valley. They were crushed and destemmed prior to pressing and primary fermentation was induced by the introduction of carefully selected yeast strains. The wine was fermented in stainless steel at cool temperatures to preserve lifted aromatics. Savee was made in the traditional method, with secondary fermentation in bottle. To fully express the Marlborough Sauvignon Blanc characters in the wine, we took Savee off lees as soon as secondary fermentation was completed.
Colour: Pale lemon/straw.
Bouquet: Fresh and vibrant with aromas of white fruit, elderflower, gooseberry and melon.
Palate: A fresh and lively sparkling wine with great fruit weight, crisp acidity and a lingering finish.
Drink: Drinking well now and great as an aperitif or with seafood. A fantastic celebration wine.

Fresh and lively sparkling wine. Finely balanced with appealing fresh fruit and racy acidity. Great concentration and complexity with good length and a crisp clean finish.

Drinking well now, and great as an aperitif or with seafood. A fantastic celebration wine.
Winemaking
Our 2007 growing season was dry and warm giving a perfect load up to harvest. warm. Cooler dry conditions as we approached harvest allowed our wines to retain intense aromatics and enabled the grapes to be picked at pristine condition.
The Sauvignon Blanc grapes used in the production of Savee were crushed and destemmed prior to pressing. Primary fermentation occurred in stainless steel tanks at cool temperatures to preserve aromatics. This sparkling wine was made in the traditional method, with secondary fermentation in bottle. Fresh and vibrant fruit characters have been retained by utilising a short period of exposure to yeast lees.
